Ok ok…this epic green sauce is actually pesto – but seriously – it is epic. This stuff is so good, you’ll want to put that s#!t on everything! Not only is this sauce de-friggen-lish, it is also jam packed with nutrient density which makes the nutritionist in me jump for joy. I made this for a workshop last weekend and it was a hit. I think I love this sauce so much because it is also stupid easy and uses ingredients I always have on hand. Spinach, hemp seeds, lemon, garlic…these are some of my staples and I highly recommend they become yours too!
I know I am not alone in the struggle to eat enough veggies each day (#thestruggleisreal). The best thing you can do is make a dip (bonus points if it is also made from veggies!) at the beginning of the week and use it to get some veggies into your mouth hole. When you get home from the grocery store, why not wash, cut and store some cucumbers, bell peppers and celery for the week that can be used to dip into this pesto? YUM and easy.
The freshly squeezed lemon in this sauce gives it a really nice flavor but also serves a purpose. The vitamin C content in the lemon helps to make the iron from the spinach more absorbable. Pretty cool, huh? Lots of healthy fats and protein coming from the hemp hearts, and nutritional yeast is also high in protein as well as B vitamins. The garlic adds some immune boosting properties. Beautiful ingredients working together to bring you lots of vitamins and minerals. Wonderful!
You can use this sauce like any other pesto, but keeping it raw will ensure you get the most nutritional benefit. That being said, I can’t wait to try this on pizza! It also goes great slathered on chicken kebabs hot off the grill.
- 5 large handfuls of spinach
- Juice from ½ lemon
- ¼ teaspoon salt
- 1 small clove of garlic, minced
- ¼ cup nutritional yeast
- ¼ cup hemp hearts
- ½ teaspoon maple syrup (optional)
- Add all ingredients to food processor and process until desired consistency. You will have to scrape down the sides a couple times.
