We have all been there: It’s dinner time and you have NO CLUE what you are going to make. It has to be something quick, easy AND delicious. This combination is usually the perfect storm for recipe creation in my house. The fact is, when this happens, I have no choice but to figure out something, fast, to keep my family from losing their mind.
I realize that for many people, sticking a ready made meal into the oven is the first option. I want to inspire you to reach for veggies when you don’t know what you are going to have for dinner. I think there is a misconception that making food from scratch takes a long time or crazy skills to pull off in little time. I disagree! It all comes down to being prepared when you aren’t prepared. But how?
I consider having some basic veggies on hand at all times part of my “pantry.” In the winter months, one of those staples is CABBAGE. It is so versatile and lasts FOREVER in the fridge! We roast it, use it in soup, and our recent favorite is this stir-fry Bulgogi bowl. My kids both DEVOUR it. And it is bursting with flavor.
One of my favorite restaurants in Edmonton is this little Korean place that serves many types of bulgogi bowls. After a recent dinner out with family to this restaurant, the flavors left me inspired to try making it at home. My husband loved it so much, he even said he would rather eat my version than the restaurants. Thanks babe 😉
There are a few toppings that really make this bowl taste authentic: traditionally fermented kimchi, sesame seeds, red pepper flakes, and green onions. Choose your favorite or add them all! YUM!
